First, of, I did the baking on Friday, October 5.2018 but wasn’t posted before today Wednesday, October 10.2018
Well, of course, I couldn’t find the peace at heart or the drive to sit and do what I was supposed to do, so I decided to bake Vegan Crunchy Baked Eggplant which I found on the interne …go figure 🤪
Anyway, they turned out pretty good so I would like to share it with you.
I didn’t have everything on the list but replaced what I didn’t have with what I did have…If you’d like to try this recipe just go to the bottom of the page and you will find it 🙂
First I cut up the eggplant, actually I didn’t read the whole recipe before I started so I had to throw out the first round since I had mixed it ALL together…hahahaha. So FIRST make sure you read the whole recipe!
So then I made one bowl for the flour, I used plain flour since we didn’t have all purpose flour (I never bake) then for the breadcrumbs I used something we call Flatbrød (flatbread), can’t say I ever saw anything like that when I lived in NY? So, I broke up the flatbread. In the two right pictures, I show you what it looks like.
I had flaxseeds so that was no problem but I didn’t have Italian seasoning so I substituted that with Greek seasoning (tases just as good you ask me!)
Then came time to bread the eggplant
